Savor Cebu's best at Savoy Hotel Manila Cebu Food Festival until August 11



There's no need to fly out in the recent bed weather if you are craving for some authentic Cebu dishes. Savoy Hotel Manila is serving you the best of Cebu this month!

The Cebu Food Festival, a collaboration between esteemed chefs Kit Carpio of Savoy Hotel Manila and Coke Semblante of Savoy Hotel Mactan Newtown, promises to delight your taste buds with the vibrant flavors of the Queen City of the South.


I got to try out some of the dishes, and here's what to look forward to when you dine at Savoy Cafe this week:



My favorite dish from the bunch is with Manok sa Kawayan, a traditional dish where chicken alongside rice and spices is cooked in bamboo. This method infuses the chicken with a unique aroma, resulting in tender, flavorful meat and yummy sticky rice that captures the essence of Cebuano cooking. This dish is most prominent in the northern part of Cebu, specifically in San Regimio. This is a perfect partner with their Pungko Pungko basket. 



Savoy Hotel Manila also aims to give us the true street food experience, with their Pungko-Pungko Basket, a recreation of Cebu City's popular dining stalls. You would usually eat with friends or family, sitting in a squat position most of the time. GinabotThis basket includes a variety of grilled and fried meats, the classic puso rice, which is rice cooked in coconut leaves, two kinds of lumpia that is paired with a classic Ngohiong sauce, kamote and more, offering a crunchy and savory taste of Cebu's vibrant street food culture.

There's also Balbacua, a hearty beef stew made from collagen-rich parts like oxtail, skin, and joints. Slow-cooked for hours with a blend of spices, this dish is a tender, flavorful masterpiece that melts in your mouth.

And their Cebuano twist on Ginisang Monggo, a comforting mung bean stew made extra special with crispy chicharon and coconut cream, adding a rich and creamy texture to the dish.



The festival also features Linarang na Isda, a traditional Visayan fish soup with a flavorful broth made from coconut milk and spices. Something that really warms your soul, perfect for the bed weather.



Lastly, savor the sweet-savory delight of Humba, a dish featuring tender pork belly simmered to perfection. This rich and flavorful dish is a favorite in Cebuano households, offering a delicious balance of sweet and savory tastes.


This event is not just a showcase of Cebu's culinary treasures but also a testament to the dynamic collaboration between two passionate chefs and the leadership of general managers Den Navarro and Jot Chiongbian, who orchestrated this festival following the success of the Ilonggo Culinary Treasures Event in March 2024.
